The wine cellars underneath the Mustilli residence in the via dei Fiori in Sant’Agata dei Goti were excavated hundreds of years ago into the tuff – a volcanic stone – on which the entire city is built. The different cellars, each with their own unique temperature and humidity, occupy a total surface area of 2500 sf; the deepest one is 50 feet below street level. Today, even if the production has moved out of the historical center of Sant’Agata dei Goti, the old cellars still fulfill their traditional role of preserving and aging in oak barrels the red Aglianico harvested from vines with the same name in the Mustilli vineyards. While a new state-of-the-art wine making facility was built just outside the historical centre of the town and came on line in 2002. It houses all the transformation process, a small laboratory and the offices of the company.
